Menu for week of 7/8 - 7/14

It is going to be in the triple digits this week, so lighter fare for the most part.  Although we'll be using it a bit, the oven stays off whenever possible and we use the crockpot, pressure cooker etc more often.  Do you eat seasonally?

Here's what we'll be eating at our house this week in no particular order.
Homemade pulled pork sliders on oven baked sweet potato slices.
Crockpot or pressure cooker pulled pork sliders w/homemade slaw on oven baked sweet potato slices; fresh fruit  *we will be making our slow cooker country style pork ribs into pulled pork as that is what is on sale.
Spinach salad w/steak, caramelized onions, mushrooms & blue cheese dressing
Organic baby spinach salad w/steak, caramelized onions, mushrooms and blue cheese dressing; fresh fruit

Lightened up tuna salad sandwiches
 Lightened up tuna salad sandwiches on multi grain 100 calorie sandwich thins w/veggies; crispy dill pickles; chips; fresh fruit

Buffalo chicken pasta salad
Buffalo chicken pasta salad; fresh fruit

Veggie and cheese loaded omelets
Dev's made to order veggie & cheese loaded omelets, blueberry mini muffins; fresh fruit
Grilled portabella & squash "burgers"
Grilled 'bella & summer squash cheese burgers; easiest ever freezer pickles; baked chips
Easiest ever freezer pickles
Eat whatever doesn't eat you first aka leftovers.
