Menu for week of 8/13 - 8/19

Did you ever think you'd hear yourself saying that a "cool front" was coming in since it is only going to be in the 90s?  I know, me either.  Gearing up for back to school and new jobs for Dev & Byron so a pretty simple week all in all.  Here's what is on the menu for this week.  What's cooking at your house?
Lentil Soup w/fresh Parm

Homemade honey mustard chicken nuggets or strips; french fries; mashed cauliflower

Spaghetti carbonara; peas

Lentil soup (vegetarian); homemade cheese crackers

Breakfast for dinner:  quiche- choice of bacon/cheddar or cream cheese & roasted red pepper; fresh fruit

Swedish meatballs over egg noodles; tossed salad w/choice of dressing

Homemade bean & cheese burritos; avocado salad

Hamburgers on homemade 40 minute buns w/caramelized onions; oven baked sweet potato fries

  1. I'm stopping by for a visit from Organizing Junkie today.
I've been living in Vegas for 5 years. We do refer to 90 degree weather as 'cooler'.
It's another 107 degree day in Las Vegas. Man! Am I looking forward to cooler temps. Unfortunately, we don't usually start cooling down till late September or October.
Your menu for the week sounds delicious!
The cheese crackers sound yummy. Do you make your own?
