Light and Easy Chinese Chicken Salad

This goes together so quickly and is so delicious that no one thinks about it being healthy and lower calorie.  We make several versions, this is our fastest, easiest and low- cal version.

1 bag coleslaw mix
1/3 red cabbage, shredded (optional, I added mostly for color and because I had some left)
2 cooked boneless, skinless chicken breasts (made w/no skin), shredded, diced or chopped
1/2 cup dried cranberries
1/3 cup roasted sunflower seeds
1/3 cup slivered almonds
1 cup Asian Toasted Sesame reduced fat dressing (I used Kraft that was on clearance- approximately 1/2 bottle, use more or less to taste) here are a couple of myo delicious ginger sesame dressing & marinade recipes - you can marinate your chicken in them for at least 30 minutes before grilling, baking etc- delish!

Mix everything together, cover and refrigerate at least an hour to give the flavors a chance to mingle and get to know each other.

Serve as is or with a nice Hawaiian sweet roll to non-dieters.
