1 bag coleslaw mix
1/3 red cabbage, shredded (optional, I added mostly for color and because I had some left)
2 cooked boneless, skinless chicken breasts (made w/no skin), shredded, diced or chopped
1/2 cup dried cranberries
1/3 cup roasted sunflower seeds
1/3 cup slivered almonds
1 cup Asian Toasted Sesame reduced fat dressing (I used Kraft that was on clearance- approximately 1/2 bottle, use more or less to taste) here are a couple of myo delicious ginger sesame dressing & marinade recipes - you can marinate your chicken in them for at least 30 minutes before grilling, baking etc- delish!
Mix everything together, cover and refrigerate at least an hour to give the flavors a chance to mingle and get to know each other.
Serve as is or with a nice Hawaiian sweet roll to non-dieters.
