Menu for week of 4/18 - 4/25

The weather still can't make up its mind, so we have a mix of warm and cool weather foods on the menu this week- all of it tasty and delicious.  We have a big extended family thing for Easter, complete with egg hunt for the kids so this is only a partial list of what will be on the menu.  What's cooking at your house this week?  Do you do anything special for Easter or whatever holidays you celebrate this time of year?

Tomato, fresh mozzarella, proscuitto & basil chiffonade atop a bed of organic baby spinach and arugula sprinkled with sea salt and fresh ground pepper and drizzled with evoo.

Homemade turkey potpie made with carrots, pearl onions, snow peas and mushrooms in puff pastry shells; tossed salad.

Southwest salad; dinner rolls.

Pork roast; roasted purple potatoes, carrots and pearl onions; strawberries and kiwi.

Easy fettuccine alfredo; mixed green salad.

Pulled pork sliders made from leftover pork; coleslaw; fruit.

Easter dinner:  baked ham; mashed potatoes;  fresh green beans; tossed salad; deviled eggs; homemade dinner rolls; tons of pies, cakes and cookies and whatever else everyone brings.
