Beef or Chicken Fajitas

We love fajitas around here, actually we love just about anything rolled up into a tortilla.  We line up the ingredients on the island and let everyone make their own so we can all add as much or as little of each ingredient we like.  Super easy for get-togethers since you can get a lot prepared ahead of time.  Enjoy.


Beef or Chicken Fajitas

Ingredients
  • Flour tortillas
  • Skirt, hangar or flat iron steak
  • Skinless, boneless chicken breasts
  • Basic fajita marinade
  • Sauteed mushrooms
  • Sauteed peppers and onions (we usually use the tri-colored pepper and onion blend as it is much cheaper)
  • Sour cream
  • Guacamole
  • Salsa
  • Shredded cheese (cheddar, colby jack or mexican blend)
  • Sliced jalapenos (fresh or jarred)
  • Shredded lettuce
  • Diced tomatoes
  • Diced onions
  • Sliced black olives
Cooking Directions
  1. Marinate* your meat (30 minutes to overnight for chicken, 3 hours to overnight for beef).
  2. Grill or broil steak to desired doneness, grill, broil or bake chicken.
  3. Let meat rest to settle juices and slice against the grain (for easier eating, cut into bite sized pieces).
  4. Warm your tortillas (microwave, oven, dry skillet) and fill with whatever you like. We usually put the condiments in a strip down the center (sour cream, guacamole, salsa) then pile on the rest. Don't overfill, they are messy enough to eat!
  5. Wrap tortilla around filling and enjoy.
