Menu for week of 3/28 - 4/3

Do you create your own recipes?  We love to experiment in the kitchen (or get out as quickly as possible, depending on what's going on) and create new flavor combinations.  Our most recent creation is one of the yummiest things that has made our tastebuds sing in a while.

Like many good things, it came about by happy accident-  Ian had wanted to make pizza so we were going to make our Homemade Pizza with Quick 30 Minute Rise Crust and since it sounded good the Freakin' Awesome Buffalo Chicken Pizza for those of us who like it a bit spicy.  Ian changed his mind about the pizza and went with something else that I can't recall at the moment and the rest of us I think nibbled on fruit and whatnot and sometime after 11 decided the buffalo chicken pizza sounded good after all.  Then I kept wavering saying yeah, it's pretty quick but I found these amazing Ronzoni veggie penne pasta (each helping includes a complete serving of vegetables) on special for 49 cents a box at Kroger (yes, we major stocked up) and pasta salad sounded better to me.  Then I'd think but I love love love wings and that pizza is so amazing and hey why not...  so our omgyumdelish Buffalo Chicken Pasta Salad was created.  It was the perfect midnight snack, all made in the time it takes to boil the pasta (our stove is slow and takes a while to start boiling - but really not much over 30 minutes if you keep boneless skinless chicken breast tenders on hand that can be cooked from frozen or have leftover chicken).  We liked it so much all day yesterday we kept saying that we wanted more, so it's on the menu for this week.  Hope if you try it you'll enjoy it as much as we did.

Anyhoo, here's our menu for this week:


Stir fried Asian veggies served over perfect brown rice

Slow cooker pork roast w/potatoes and carrots; green salad with dressing of choice

Lentil Soup

Meatloaf cupcakes frosted with mashed potatoes; gravy; tiny baby peas, pearl onions and mushrooms; sliced kiwi and strawberries

Oriental chicken wings; easy lo mein

Breakfast for dinner:  Strawberry stuffed french toast; cantaloupe and/or other fresh fruit
