Winner, winner, (one dish) chicken dinner


serves 6
1 small bag new potatoes, halved
2 small bags green beans trimmed and halved
2 pkgs baby bella mushrooms, stemmed and quartered
3 chicken breasts
2 cans cream of mushroom soup or homemade equivalent with packet of onion soup mix or homemade equivalent (you can probably get by with 1 can, but we like a lot of gravy)

Place all vegs in bottom of 9x13 casserole

Lay chicken on top

Top with  soup mix

Cover with foil and bake at 375 degrees for 45 minutes, uncover and bake additional 15 minutes.

This was sooooooo good.  All the vegs were marked down but still good and fresh at Kroger so we came up with this concoction and it is definitely going into our rotation.  Sorry we don't have a pic of the finished dish, we scarfed it down pretty much as soon as we took it out of the oven and dished it up.

As you can see, we kind of go by the recommended dietary guidelines for the protein (about as big as a deck of  cards) so 3 breasts were enough for 6 servings, if you are really big meat eaters you can add more.
