Homemade cream of (whatever) soup mix


Cream of (whatever) soup mixes can be a bit expensive as well as taking up a lot of room in your pantry.  Here are several versions to make your own-  great for making a nice hot cup of soup whenever you want one or for using in your favorite recipes.  Very adaptable- you can play with the seasonings and tailor them to your diet-  use lowfat or low sodium versions of the ingredients if you prefer.  We like to switch things up so make different mixes at different times- you can do the same or choose the one with your fave flavor and stick with it.

*You can omit the boullion from any of these and use your favorite stock/broth when reconstituting.

Add sauteed celery for cream of celery soup, mushrooms for cream of mushroom soup, finely diced chicken for cream of chicken soup, thawed frozen broccoli pieces for cream of broccoli soup, etc...
Use low sodium tomato juice in place of the water for a creamy tomato soup or go all out and use low sodium V-8 for a burst of flavor in your soup-  heck be daring and go for the spicy!

Cream of (whatever) soup mix #1
(1 can soup = 1/2 cup of the dry soup mix recipe with 1 1/2 cups cold water)

2 1/2 cups flour
2 cups instant nonfat milk powder
1/2 cup chicken bouillon powder
2 tablespoons onion powder
1/2 teaspoon thyme
1 teaspoon black pepper

Combine all ingredients store in an airtight container.

Cream of (whatever) soup mix #2
(1 can soup = 1/3 cup of dry mix with 1 1/4 cups of cold water)

1 cup powdered milk
3/4 cup cornstarch
1/4 cup instant bouillon granules
2 tablespoons minced dried onions
1 teaspoon celery seed
1 teaspoon thyme
1/2 teaspoon pepper

Combine all ingredients store in an airtight container.

Cream of (whatever) soup mix #3
(1 can soup = 1/3 cup of dry mix with 1 1/4 cups of cold water)
2 cups of instant nonfat dry milk powder
2 1/2 cups flour
1/4 cup chicken boullion powder
2 Tablespoons minced dried onions

Combine all ingredients store in an airtight container.

Low fat, low sodium cream of (whatever) soup mix
(1 can of soup = 1/3 cup of dry mix and 1 1/4 cups cold water)

2 cups instant nonfat dry milk powder
1 cup cornstarch
1/4 cup instant low sodium chicken bouillon granules
2 Tbsp. dried onion flakes
1/2 tsp. pepper

Combine all ingredients and store in airtight container.
