Tex Mex Casserole Jack-O-Lantern's

Even though they obviously aren't perfect, a simple thing like making a jack-o-lantern onto a favorite casserole makes the meal festive and gives it that somethin' somethin' we all try to jazz it up for the holidays.

This is one of my most requested tex-mex casserole recipes all decked out for the season.

I'm including my recipe since EVERYONE loves it and it is beyond easy, but feel free to substitute any of your own family faves- really, we just wanted to give you the idea.

Easy Tex-Mex Casserole

3 lbs ground beef or turkey, browned and drained then put back in pot.
Add in:
1 can corn, drained
1 can tomato sauce
1 jar your fave salsa

Preheat oven to 400 degrees.

Mix up 2 boxes Jiffy corn muffin mix according to package directions adding in 1 can cream corn and several drops orange food coloring. Let stand 5-10 minutes.

Divide meat mixture between 2 round cake pans and add a layer of shredded cheese- we like colby jack, but cheddar works or a mexican blend.

Top with corn muffin mix and then decorate with black olives- Kyra and Devii did one in slices and one with chopped - it moves slightly while baking so won't be perfect, but they are perfectly charming.

Bake for 25-30 minutes or until done.

Let stand 5 minutes before serving.

*These are just as delicious the second time around and freeze beautifully, so one can go into the fridge or freezer for an easy meal.
