Menu for week of 5/24 - 5/30

One think we actually do like about Arkansas is that there is a much longer growing season.  We love love love fresh produce- and while we don't have our own garden (yet) we do have generous friends and relatives.


Hawaiian chicken with tropical rice, fresh pineapple spears  (fantabulous new recipe).

One of my very favorite warm weather dinners- vine ripened tomatoes, and hot buttered sweet fresh corn-  not Jersey 'maters but they are good.   The rest of them can have grilled fish with if  they want.

Fajitas with homemade guacamole and all the fixin's.  Probably beef but might end up doing chicken we'll see what sounds good.

Breakfast for dinner- probably some type of egg sandwiches as Thomas' English Muffins were on sale and we love those nooks and crannies. ;)   Fresh fruit.

Angel hair pasta with roasted vegs and fresh grated parmesan, grape tomato, fresh mozzarella and baby spinach salad w/Italian dressing.

Chef salad w/choice of dressings.

Homemade pizzas-  Hawaiian, white,  and mushroom cheese, pepperoni for Ian ... or maybe calzones if we get ambitious.
