Carrots, sliced or diced
Bacon, diced and fried- for really great flavor (but NOT if you are counting calories dump the whole thing in, grease and all.
Your fave seasonings- I love it spicy, a Cajun or Creole blend for this.
1 or 2 cans of evaporated milk - skim is fine (depends on how much you are making)
Pour everything except the evaporated milk and cheese into the crockpot and cook on low for 7-8 hours or until the potatoes are cooked.
30 minutes before serving, add the evaporated milk and cheese and stir until well blended.
If you like a creamy consistency (we prefer the chunks) zhussh it up with a stick blenders before adding the milk and cheese.
When you want to load it up with veggies this is a good time to add canned or frozen/thawed green beans, corn, etc... really, you can't mess it up.
