A lot of families make Ham for their Christmas Dinner- and I could lie and tell you that we do as well, but to be quite frank since my beloved Grinch eats Rare Who Roast Beast, we do too! What can I say, we're suckers for the green guy.
We do, however have one with our Christmas Eve brunch. We go to Ken's moms (along with the WHOLE CREW- trust me when I tell you there are tons of us- a minimum of 40, max???) early Christmas Eve so no-one has to choose sides for who to spend the holiday with- isn't that the greatest idea? I thought so too. We all wish each other merry, have a lovely brunch with everyone bringing their specialties and then exchange gifts and still have time for last minute shopping before getting on with our own celebrations.
Ken used to get a ham from work as his Christmas bonus so we'd take that up- here's our recipe- and even when they stopped with the bonuses everyone counted on us to bring the ham as one of our offerings.

I don't particularly care for most bean dishes but if we use the bone from a really good ham I love them.

I would get the boneless spiral ham. Yum!
My favorite ham recipe:
Ingredients
* 15 lbs whole bone-in ham (I prefer Cooks SuperTrim brand)
* 1 lb brown sugar
* 1/2 cup yellow mustard
* aluminum foil
Directions
1.In a medium size mixing bowl, mix yellow mustard and brown sugar until you have a thick"paste".
2.Take all wrappers off of ham and trim away excess fat.
3.Line baking pan (I spray with Pam in case some of the brown sugar mixture escapes, clean up is easier) with Aluminum foil.
4.Place ham on foil and spread brown sugar/mustard paste on top.
5.Fold and seal foil.
6.Do not open again until ham is done.
7.Bake at 350° for 4 hours.
8.Let set for about 1 hr then carve.

My worst Thanksgiving snafu was the day the pecan pie ran over and I didn't have a cookie sheet under it. The sugary filling hit the oven burner and there were flames and smoke. Happily, the pie was saved and finished in the microwave.

I immediately clicked on "appetizers" since finger food is my favorite kind. The Ham, Spinach and Pepper Appetizer Rolls sound absolutely yummy!

My favorite recipe that uses ham is scrambled eggs with little chunks of ham scrambled in & topped with a slice of American cheese.
The worst holiday cooking disaster was last year when I was baking my pumpkin pies the night before Thanksgiving. I made the pies & put them in the oven on a baking sheet. About 10 minutes later I heard this crack come from the oven & low and behold, the pan had warped & spilled my pumpkin pies all over the bottom of the oven. I had such a mess to clean up in a hot oven - I didn't want the filling to burn on the oven & stink up the house!

I'd love to try the Apple Glazed Ham with Apple-Ginger Compote. If I make that, my family will think I'm all fancy because I used the word "compote". That, or they'll be confused, because compote sounds suspiciously like compost. Eh. More for me, that way.
I love Ham and Asparagus w/ pasta. Really, really easy.
Prepare pasta according to package directions(I like fettucini for this.)
Saute in olive oil:
1 onion, diced
1 bunch asparagus, trimmed and cut into 1 inch pieces
2 cups diced leftover ham
When onions are softened, add 3 tablespoons fresh sage, chopped
Drain pasta, add it all back to the big pasta pot. Add:
1 cup cheddar cheese, shredded
olive oil, if too dry
black pepper.
The cheese should be salty enough, but you can add salt if you like.

Another simple way to use up ham is just to fry it a little and put it on a homemade biscuit. My hubby likes mayo on it, but I'm a purist. Nothing but the ham for me. That's a simple recipe, right?

The worst cooking disaster was when My Dad tried to make a great dinner of Chicken Pot Pie for my mom.
Well it looked nice but the frozen vegtables he used, didn't go over too smoothly.
1) They were still frozen somehow
and 2) My mom hates peas.
So as a chance to recover from this he accidently burned the pies and we went to the local Taco Bell for dinner!

I also use ham in my split pea soup - 2 bags split peas (cleaned), large sauce pan filled 3/4 of the way with water, ham bone, sliced carrots, small onion chopped, salt & pepper to taste. Mix it all together & simmer for several hours until soup is a creamy, thicker consistency. Near the end, add some ham chunks to the soup.
I'd like to try the vanilla sceted sweet potatoes.
When I was 13 I was making my first ever cake. Well, guess who forgot the flour? What a mess I had to clean up in the oven!

I married my husband and then met his family after. That first xmas I decided to do a big ham dinner.So because I knew I would be busy with side dishes and only had a small oven I decided to place the ham in my crock pot/roaster. I went about my afternoon making stuffing, homemade rolls, pies..... About half hour before dinner was to be served I realized I hadn't checked the ham, lol hadn't checked it at ALL. I made my way past all of my guest (8 to be exact) and went into the kitchen only to find the ham wasn't done. Apparently I turned the crockpot/roaster dial on but had forgot to plug it in. My husband was able to call a friend that owned a local deli and he brought over slices of deli ham( you know the kind for sandwiches). Needless to even 5 years later this story is still brought up at xmas dinner and the first impression I made with his mom is priceless. LOL

Another favorite recipe using ham is a western omelet.
Dice up ham, green pepper & onion. Mix eggs with a little milk, salt & pepper to taste. Dump eggs into skillet and allow to set. Place ham, green pepper, onion & shredded cheddar cheese on half of the egg & fold the rest of the egg on top. Cover & allow to cook until the cheese is melted.
