Even though we don't can, there's no reason we can't have summer-fresh foods any time of the year. A little bit of work and a freezer and you can preserve the awesome flavors at the peak of freshness.
This is just a small sampling of what we've been up to lately.
Cucumbers and a bit of onion makes a simple freezer pickle that is as delicious as it is easy.
Almost 20 lbs of peaches in our market bag gets peeled and sliced then mixed with a light sugar syrup and we'll be eating delicious desserts in the dead of winter that bring summer a little bit closer.
First you make a roux, add the trinity (peppers, onions and celery), lots of good chicken, sausage and of course okra and you've got some awesome gumbo.
