Menu for week of 8/3 - 8/9

This week we have some eggplant to use up so it's on the menu twice.

The parm was tonight's dinner, the casserole is my own creation (and yes we tasted it and YUM!) is for later in the week.

Once again, just a loose meal plan in no particular order.

Eggplant parmesan- baked, not fried this time, spinach salad with raspberries, almonds and a raspberry vinaigrette

Either fried rice or stir fry with brown rice, something oriental

Breakfast for dinner- breakfast burritos, fresh fruit, probably peaches

Ham steaks with brown sugar glaze, mashed potatoes, sesame green beans, tossed salad

Creamy eggplant ziti bake, dinner salad

Sausage, potato and carrot pot w/fried cabbage

Chicken Rolls- this is a new recipe I am making up as I go but basically I am going to roll up chicken breasts with veggie cheese spread (knocked down to about 1/3 the price) and spinach, bread and bake, I'll post the recipe if it's as good as I think it will be, we'll serve with steamed mixed vegetables and a cold veggie tray with some type of dip for those that want it.
