Pork roast with red potatoes, carrots and onions
Bountiful Garden Veggie Casserole (can be made low carb by omitting breadcrumbs) featuring eggplant, squash and more.
This is MY FAVE! veggie dish.
BLT's and Smoothies
Easy-peasy Crockpot beef stew, warm french bread
Butternut squash soup, maple honey ham, mushroom and cheese paninis on ciabatta rolls
Angel hair pasta with roasted veggies
Breakfast for dinner- baked french toast, sausage links for those that want them, fruit salad

Mmm...I was going to suggest dinner out but now I think breakfast for dinner sounds good!!
The casserole sounds good! We always have a ton of those veggies thanks to our CSA share. I might have to change our Wednesday casserole this week to yours :)
How do you make your baked french toast? I have heard of it but never tried it.
I'll have to give that Casserole a try when my veggies get big enough :D
